Soft Corn Bread Recipe 1

1 tablespoonful of butter
1/2 cup of white corn meal
1 egg. beaten lightly
1/2 teaspoonful of salt
1 level tablespoonful of baking powder

Scald the milk in a double boiler, stir in the meal and let cook three hours, then beat in the other ingredients. Note that it is a tablespoonful and not a teaspoonful of baking powder. Turn into a buttered baking dish suitable for the table. Bake about forty minutes. Serve hot from the dish. This is often called Spoon corn bread[/font]
